Chantilly Cream
Chantilly Cream or Crème Chantilly, as it is called in French, is a sweet whipped cream dessert. Try it by itself or add a bit on top of fresh fruit or our low protein scone recipe!
Ingredients (for 2 servings):
200 mL (about 7 fl oz) prepared LP Drink
100 g (4 oz) sugar (about 6 tbsp)
175 g (6 oz) unsalted butter (14 tbsp or 1 3/4 sticks)
20 g corn flour (about 3 tbsp)
2 tsp vanilla extract
Method:
1. Add the LP Drink, the butter and the corn flour into a saucepan. Place over a gentle heat and stir well. Continue to stir until the mixture thickens, but do not allow the mixture to boil.
2. Once the mixture has thickened, pour the mixture into a tall container.
3. Add the sugar and vanilla extract and blend the mixture with a hand blender for 20-30 seconds.
4. Allow the mixture to cool and then place in a fridge for 4-6 hours.
5. When chilled, the mixture should have a creamy soft texture.
6. Blend or whisk the mixture for 20-30 seconds before serving.
